Macaron-Stuffed Cookie

Double your delight with Delizza Macarons baked inside of classic chocolate chip cookies.

Ingredients

(Makes approx. 12 cookies)

  • 12 Delizza Macarons (frozen)
  • 1 cup butter (2 sticks)
  • 1 cup brown sugar
  • ¼ cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 to 1 ½ cups chocolate chips
  • Flake salt to garnish (optional)
Directions
  1. In a medium saucepan melt butter over medium heat. Heat the butter until foamy.

  2. In a mixing bowl combine melted butter, brown sugar and white sugar. Mix together with a mixer. Incorporate eggs into the butter and sugar mixture, one at a time and add vanilla extract.

  3. In a separate bowl whisk together flour, salt and baking powder.

  4. Combine the flour mixture into the butter and sugar mixture.

  5. Cover the dough with foil or plastic wrap and set aside in the refrigerator for at least 30 minutes. For best results, let the dough rest overnight.

  6. Preheat oven to 350 degrees Fahrenheit.

  7. Fold the chocolate chips into the dough.

  8. Using an ice cream scoop, scoop out dough onto a piece of parchment paper and using your thumbs flatten into a 2½- to 3-inch circle.

  9. Place a frozen Delizza Macaron in the center of the flattened cookie dough and wrap with outer edges of dough to form into a puck. Repeat with remaining macarons.

  10. Place the cookie dough pucks onto a cookie sheet with 2 inches between each puck.

  11. Optionally, sprinkle flake salt on each cookie.

  12. Bake cookies for 12 to 14 minutes.

  13. Let the cookies cool on a wire rack for 10 minutes. Enjoy.
