Deep-Fried Mini Eclairs
Bring the carnival home with Delizza’s decadent Deep-Fried Mini Eclairs. Fried to golden brown perfection, this over-the-top dessert will take your tastebuds to new heights.
Ingredients
(Makes approximately 24 eclairs)
- 24 Delizza Belgian Mini Eclairs (room temperature)
- 1 cup flour
- 2 tablespoons powdered sugar
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 large egg
- ⅔ cup milk
- 1 teaspoon vanilla extract
- Frying oil
- Powdered sugar (as garnish)
- 12 wooden skewers
- Whipped cream (optional)
- Strawberries (optional)
Directions
- Skewer 2 Delizza Belgian Mini Eclairs onto each skewer. 
- In a small blender combine flour, powdered sugar, baking powder, salt, egg, milk and vanilla extract. Blend until smooth. 
- Fill a frying pan with about 1½ inches of oil. 
- Heat oil over medium heat to about 350 degrees Fahrenheit. 
- 
                          Carefully dip the skewered mini eclairs into the batter. 
- Fry immediately in hot oil. Fry until golden brown on both sides. 
- Cool on a wire rack for 5 minutes. 
- 
                          Sprinkle powdered sugar onto the fried mini eclairs. 
- 
                          Enjoy immediately, optionally with whipped cream and strawberries on the side.
